When my kids were young we'd have tacos like this once every couple of weeks. In small bowls I'd put out all their favorites and let them make their own in pre made organic shells. They still love tacos and recently one of them had her own taco Tuesday. This inspired me to make fish tacos yesterday. Super simple, this is what you'll need: small organic corn tortillas, avocado, tomato, black beans and 3 types of white fish. Cut the fish into smallish pieces and sauté in a light oil covered on low for 12 minutes. I add a little shallot and red pepper. Heat the tortillas and black beans. Serve the fish over the tacos and add black beans to taste. Garnish with the avocado and tomato. I also put a dollop of tartar sauce on ours.
