
What you'll need: leftover quinoa, kale, garlic, olive oil and egg.
Dice your clove or two of garlic and saute in oil until tender and add a cup thinly sliced kale. Cook until it breaks down a bit and then fold in the quinoa. Add sea salt and pepper to taste and top with a cooked egg. Super simple to make and a great way to start the weekend.
