Lee Bailey wrote about his banana layer cake in the book: lee bailey's country desserts. I recently made this cake which takes a good 2 hours from start to finish, we opted out of the frosting. It was golden brown and delicious if you like bananas. We do ! After it cooled, I sliced more banana for the center and dusted the top with powered sugar.
My version of lee bailey's banana layer cake.
2.1/2 cups sifted organic flour
2.1/2 teaspoon baking powder
1/2 teaspoon baking soda
a pinch of ground cloves
1/2 teaspoon nutmeg
1 1/4 teaspoon cinnamon
1 1/4 cups of sugar
1 stick of sweet butter
2 large eggs
a teaspoon of vanilla
1 1/2 to 2 bananas
Preheat your oven to 375. I used 2 round non stick cake pans and lined them with parchment paper then floured the edges after using an oil around the inside top of pan.
Sift together your dry ingredients. Cream the butter and sugar then add the eggs one at a time. add vanilla and bananas. I used one and a half banana, it was plenty moist. Bake it for 25 minutes but keep an eye on it after 20, then test the center. Our house smelled delightful...
